Le pesche noce

Le pesche noce, come le altre varietà di pesche, sono ricche di acqua, quindi indicate per reidratarsi nelle giornate più calde, e dal leggero effetto lassativo, quindi particolarmente indicate in caso di stipsi.
Le pesche sono uno dei frutti di più facile digestione, contengono fibresolubili insolubilizuccheri in quantità moderata e hanno di conseguenza un apporto calorico limitato; contengono anche vit. A, vit. C e soprattutto potassio e a quest'ultimo minerale devono gli effetti diuretici: l'elevato apporto di potassio rende le pesche particolarmente utili in caso di ipertensione.
La pesca noce ha polpa liscia e rossastra e può avere polpa bianca o gialla: la varietà a pasta gialla è più ricca di vit. A.
La pesca noce può essere consumata al naturale o in macedonia ma è anche ideale nella preparazione dei dolci.

Torta con le pesche
Montare 2 tuorli d'uovo (tenere da parte gli albumi) con 100 g di zucchero di canna, incorporare 100 g di olio evo e 200 ml di latte di riso (preferibilmente fortificato con calcio); aggiungere 100 g di amaretti tritati finemente, 150 g di farina integrale e 150 g di farnia bianca con 1/2 bustina di lievito. Montare a neve i 2 albumi tenuti da parte con 1 pizzico di sale e aggiungerli al composto.
Versare il composto ottenuto in uno stampo rivestito con carta da forno e disporre a raggiera sulla superficie 4 pesche noce con la buccia (preferibilmente biologiche) tagliate a spicchi, premendole leggermente nel composto.
Cuocere in forno a 180°C per c. 45'.
Questa torta ha un discreto contenuto di fibre, sia per la presenza di farina integrale (metà del totale) sia per la presenza delle pesche, contiene poco colesterolo (solo quello proveniente dalle 2 uova) e contiene grassi (in quantità non eccessiva) di buona qualità, grazie al'utilizzo dell'olio di oliva: risulta per questi motivi indicata anche in caso di dislipidemia.
Contenendo latte di riso (al posto del comune latte di vacca) può essere consumata tranquillamente anche in caso di intolleranza al lattosio e di allergia alle proteine del latte vaccino.
